I was talking to my friend that lives in another country and she said that she was able to get lamb brains from a butcher. However when I tried this in the UK, they said that they can't / won't give me any.
Can anyone give me any advice on where I can get an animal brain? It's really difficult to study the internal structure from pictures, and I really want to be able to work with a real one to do my research on EBS.

The UK has had some bad experiences with bovine spongiform encephalitis (BSE), or mad cow syndrome. Cooking at high temperatures will not kill the prion that contaminates infected brain and nerve tissue.
You might try going out into the countryside and talking to a farmer. Ask for a slaughtered lamb or sheep and remove the brain yourself.

My girlfriend is a biology major (in the US of course) and I know that there are companies that sell all kinds of animal specimens and parts. That might be an option for you.

There are lots of formaldehyde analogues out now. They aren't as cancerous-toxic, but do the same thing.
